Caramel Apple-Almond Crepes

A great dish for dessert or breakfast, these filled crepes are quick and easy to make, full of wonderful flavor, and make any occasion special.

Thousand Island Dressing

While many an argument has been fought about what makes a dressing a Thousand Island dressing (vs. French or Russian or Catalina...), my definition includes a little sweet pickle and red peppers, a slightly orange color, and a chunky texture. It also requires a mixture of sour and sweet that can vary on the pickles you use, so make sure to taste the dressing and add a bit of sugar or vinegar to adjust the flavor a little bit. This dressing is better made ahead and stays good in the fridge for up to a week. You can use fat free or low fat mayonnaise with excellent results. Fresh chopped red bell pepper can be used in place of the pimento, and regular, red, or green onions for the sweet onion. I just eyeball the onion and grate a small amount into the bowl directly, but you can of course measure it if you prefer. If you need a thinner dressing after adjusting all the seasonings to your like add a little bit of water, and extra mayo if you need to thicken the dressing.

2/3 cup mayonnaise
1/4 cup ketchup
3 tablespoons white vinegar
1/4 cup diced pimento
1/4 cup grated sweet onion (and any juice you might get from grating)
2 tablespoons sweet pickle relish
Dash of cayenne pepper

Whisk together the mayonnaise, ketchup, and vinegar in a small bowl until smooth. Add the pimento, onion, relish, and cayenne and mix well. Add salt and pepper, then taste and adjust the seasonings accordingly. If making in advance, stir and re-taste before serving.

Makes about 2 cups dressing.
