Reuben Wraps
When talking to friends about their favorite use of leftover corned beef the number one reply was Reuben Sandwiches. This is an easy version on those sandwiches, which has the added advantage of being able to be made in advance. They are also much less messier than the traditional sandwich and are great for entertaining. If you do not have commercial Thousand Island dressing on hand, use our
simple recipe, or opt for a commercial or our homemade Russian Salad Dressing.
2 cups washed and torn romaine lettuce
2 cups shredded cabbage or cole slaw mix
1 cup shredded carrots
1 cup shredded or finely chopped cooked corned beef
3/4 cup shredded Swiss cheese
6 10-inch white or wheat flour tortillas
1/2 cup Thousand Island or Russian salad dressing
In a large bowl toss the lettuce, cabbage, carrots, corned beef, and cheese until well mixed. Distribute the lettuce mixture evenly down the center of the tortillas. Drizzle the dressing on each line of filling. Roll up the tortillas and serve or wrap tightly in plastic wrap and refrigerate until ready to serve.
Makes 6 servings.
