Detail of Caramel Apple-Almond Crepes

Caramel Apple-Almond Crepes

A great dish for dessert or breakfast, these filled crepes are quick and easy to make, full of wonderful flavor, and make any occasion special.

Braised Cabbage

Simple and easy, this recipe makes for a tender and delicious side dish that pairs well with many dishes. You can swap chicken broth for the vegetable broth if you do not need or want a vegetarian dish, and for some extra richness you can add a few spoonfuls of butter. Other than that, a simple sprinkling of salt and pepper is the only addition that you need for this savory side dish of tender, mellow cabbage.

1 teaspoon olive oil
1 large cored and sliced cabbage (about 3 pounds)
2 cups rich vegetable stock or broth
Freshly ground black pepper

Heat the olive oil in a large heavy skillet or pot over medium-high heat. Add the cabbage and toss quickly to slightly brown. Once browned, add the vegetable stock and and bring to a boil. Reduce the heat and simmer for 15-20 minutes, or until the cabbage is just barely tender, but not mushy. Return the cabbage to a boil and cook until the broth has mostly evaporated to form a rich sauce for the cabbage, and the cabbage is very tender, but not mushy. Season with salt and pepper to taste and serve hot or warm.

Makes 6 servings.
