Slow Cooker Corned Beef
While we had mixed results when trying to make an entire Slow Cooker Corned Beef Dinner, there was no denying that the slow cooking is a wonderful - maybe even the very best - way to prepare corned beef. The meat comes out tender and incredibly flavorful and can cook for as long as 10-11 hours, which you cannot do with vegetables in the mix. If your corned beef comes with a seasoning packet, toss it in. If it does not, add some peppercorns, a few whole, peeled garlic cloves, bay leaves, and some mustard seeds or prepared mustard. We used Guinness and a pale ale and had good, if different, results with both...so use your favorite type of beer. Water, low sodium chicken broth, or apple juice can be used in place of the beer if desired.
2 1/2-3 pound corned beef brisket
1 cup brown sugar
1 1/2 cups dark beer
Rinse the brisket in cold water and pat dry. Cut in half, and place in a 4 quart or larger slow cooker. Sprinkle the brown sugar over the brisket and pour the beer overtop. Cover and cook on low for 8-9 hours. Remove the brisket to a platter and cover with foil to allow the meat to rest for 10 to 15 minutes before slicing. If desired, thicken the sauce with a little cornstarch and cook uncovered on high for 10-15 minutes in the slow cooker, or in the microwave for a minute or two.
