Bacon Fried Cabbage
Even cabbage haters will go back for seconds with this mellow and savory side dish! We use streaky bacon, but you can use any bacon you want. If you use a fattier, less meaty bacon, use more bacon, do not add the oil, and drain off about half of the fat before adding the cabbage. I like adding a few dashes of red wine or cider vinegar to this dish before serving, but not everyone agrees with me on this variation!
1 tablespoon olive oil
4 ounces chopped streaky bacon
2 minced onions
2 minced garlic cloves
1 pound shredded green cabbage
Salt
Freshly ground black pepper
Heat a large, heavy skillet over medium-high heat. Add the oil, and once it is hot add the bacon and onions and saute until the bacon is cooked through and the onions are translucent and tender. Add the garlic and saute for 2-3 minutes more or until the garlic is fragrant. Add the cabbage and season with salt and pepper. Cook uncovered, stirring frequently, for about 8-10 minutes, or until the cabbage is tender, but not mushy.
Makes 6 servings.
