Angel Hair Nests with Olive "Eggs"

Perfect for spring, this easy and delicious recipe makes a great appetizer, side dish, or entree and will add a bit of whimsy to your spring table. And all in just about 15 minutes total time!





Asian Glazed Grilled Salmon

One of our favorite ways to prepare salmon, and incredibly easy, this is one of my never-fail recipes for entertaining that is always very popular when I serve it. Even more telling, I always need to have extra copies of it around to fill all the requests I get for it. Make sure the grill is well greased or else the salmon and the sticky glaze will stick like crazy. The glaze also makes a great dipping sauce for other dishes or as a flavorful sauce for white rice.

1/3 cup reduced-sodium soy sauce
3 tablespoons dark brown sugar
1/2 teaspoon crushed red pepper flakes (or to taste)
1/4 teaspoon ground ginger
Dash sesame oil
2 pounds salmon fillets

Preheat the grill to medium and heavily oil the grill rack. Combine the first five ingredients in a small bowl while the grill is heating. Grill the salmon covered for 5-6 minutes on each side, brushing the salmon liberally with the glaze several times on each side while grilling, until the salmon is cooked through. Serve the salmon hot or at room temperature. If serving with leftover glaze, reheat the glaze to boiling in a small saucepan or microwave to make sure any juices from the raw salmon are cooked through.
