Caramel Apple-Almond Crepes

A great dish for dessert or breakfast, these filled crepes are quick and easy to make, full of wonderful flavor, and make any occasion special.

Strawberry Orange Salad

Light, refreshing, and colorful, this springy salad makes a great addition to any menu as a light dessert or side dish served with many traditional holiday meals. The salad is best made one hour in advance so it chills thoroughly, but cannot be made more than 2 1/2-3 hours in advance or else the strawberries become overly mushy. We substitute Splenda for the sugar when making this and it works perfectly - no one can tell the difference.

1/2 cup freshly squeezed orange juice
1/4 cup sugar
2 teaspoons freshly grated orange zest
2 pints hulled and sliced fresh strawberries
5 large peeled and segmented navel oranges

Combine the orange juice, sugar, and zest in a small heavy saucepan. Bring the mixture to a boil and cook for 1-2 minutes, or until the sugar dissolves. Cool the sauce to room temperature. Toss the strawberries and oranges with the cooled sauce and refrigerate for at least one hour.

Makes 6 servings.

Chilling Time: 1 hour
Total Time: 1 hour, 15 minutes
