Creamy Citrus-Coconut Dip|
This quick and easy dip for fruit, cookies, cake squares, or even brownies - yum! - can be whipped up in just minutes and can also be made up to 24 hours in advance, or served immediately after you make it - which is the best of both worlds! I like serving this dip with orange or grapefruit segments, fresh berries, pineapple, kiwi fruit, apple slices, grapes, cantaloupe...just about any fruit really! Toasted almonds make a nice addition to this dip - either with or in place of the coconut. And so does grated white or dark chocolate!
3 cups lemon, orange, lime, or vanilla yogurt
2 tablespoons orange marmalade
2 tablespoons flaked coconut
Combine all of the ingredients in a small bowl and refrigerate, covered, until ready to serve.
Makes 3 1/2 cups dip.
