Easy Greek Chicken|
Simple and delicious, this is one of my favorite last minute chicken dishes. The uncooked topping is easily prepared while the chicken is cooking - and is also excellent served on top of other chicken prepared simply, turkey, pork, or even fish.
2 tablespoons olive oil
4 boneless, skinless chicken breast halves pounded flat
Freshly ground black pepper
1 tablespoon Greek seasoning, divided
3 diced plum tomatoes
1/3 cup chopped Kalamata olives
1/3 cup crumbled Feta cheese
Heat a large skillet over medium heat. Add the olive oil and heat until hot. Sprinkle the chicken breasts with salt and pepper and half of the Greek seasoning. Cook the chicken breasts for 5-6 minutes on each side, or until golden brown and cooked through. While the chicken is cooking, combine the remaining ingredients, including the remaining Greek seasoning in a small bowl. Serve the chicken with the tomato-olive mixture.
