Baked Honey Mustard Chicken
Simple and easy to make, this chicken is incredibly tasty given that it only has five ingredients and takes less than five minutes of active preparation. It also is inexpensive and the recipe can be multiplied many times for a large crowd when you need a simple and reasonably priced chicken dish for a lot of people. You can cut up a whole chicken (or buy one cut up for you), or can use legs, thighs, wings, or bone in breasts with or without the skin. Plain yellow mustard works great in this recipe, but you can also use a spicy brown, Dijon, coarse-grained, or any other mustard you favor. Simple additions to add to change the taste slightly or dress up the chicken are diced onion, diced bell peppers, 1 teaspoon curry powder, 1 bunch sliced scallions, fresh parsley or chives, or as much garlic as you like.
3 pounds chicken parts
1/2 cup honey
1/4 cup melted butter or margarine
1/4 cup prepared yellow mustard
Salt
Freshly ground black pepper
Preheat the oven to 350 degrees. Wash the chicken parts and pat them dry. Mix the remaining ingredients in a large roasting pan until smooth. Add the chicken and toss to coat evenly. Flip the chicken so that the skin side is up - if you are using skinless parts cover the pan with foil - otherwise, leave uncovered. Bake for one hour or until juices run clear and the chicken is tender.
