Caramel Apple-Almond Crepes


A great dish for dessert or breakfast, these filled crepes are quick and easy to make, full of wonderful flavor, and make any occasion special.


Hot Orange and Spice Apple Cider

Aromatic and rich, this cider is just fabulous on a cold fall or winter day. I never met a hot cider I didn't like, but this one with the heady scent of oranges, cinnamon, cloves, and anise is a particular favorite. I typically will use one of my slow cookers (crockpots) to prepare warm beverages and keep them warm to free up the stove (and the foot traffic away from the stove) but you can prepare this cider on the stove just as easily. Simply combine the ingredients and simmer for 20 minutes and then keep warm over low heat while serving.

3 oranges
36 whole cloves
3 quarts apple cider
6 cinnamon sticks
3 star anise pods

Stud the oranges with the cloves and set aside. Combine cider and spices in a large slow cooker on high heat. Cover and cook on high for 30 minutes, then reduce the heat to low. The cider can simmer for up to four hours on low if needed.

Makes 12 servings.
