Creamy Double-Cheese Polenta
Mmmm. Mmmm. Just officially typing up this recipe makes me want to make it for dinner yet again! The ultimate in comfort food, this polenta is incredibly and decadently rich, creamy, and oh-so-cheesy. (In a good way, I promise!) This makes for a very hearty side dish, but is also a great dish on hand to fill out a vegetarian dinner or when you are serving a mix of both vegetarian and meat-eating guests.
8 cups water
2 teaspoons salt
2 cups polenta
8 ounces softened mascarpone cheese
1 cup freshly grated Parmesan cheese
Bring the water and salt to a boil in a medium heavy saucepan over high heat. Slowly whisk the polenta into the boiling water, stirring constantly. Once all of the polenta has been added, reduce the heat to medium-high and cook, continuing to whisk constantly, until the polenta is cooked and cohesive - about 12-15 minutes. Add the cheeses and mix well. Serve immediately or keep warm over very low heat until ready to serve, stirring frequently.
Makes 6 servings.
