Super Roquefort Dressing|
Bleu cheese salad dressing is a favorite in my family, and this flavorful version is easily my favorite. We serve it on salads, with spicy chicken, over baked potatoes, raw vegetables, and even plain old potato chips and it is always gobbled up with glee. For a vegetarian dressing, make sure to use Vegetarian Worcestershire sauce.
3 ounces crumbled Roquefort cheese
1 3/4 cup heavy cream
3/4 cup mayonnaise
3 minced shallots
1 minced garlic clove
2 tablespoons lemon juice
2 teaspoons Worcestershire sauce
Freshly ground black pepper
Combine all of the ingredients in a medium bowl with a fork. Mix well, but do not overmix - the cheese should still be crumbly and the mixture will not be totally smooth. Enjoy immediately or cover and refrigerate for up to three days.
Makes about 3 1/2 cups dressing.
