Caramel Apple-Almond Crepes


A great dish for dessert or breakfast, these filled crepes are quick and easy to make, full of wonderful flavor, and make any occasion special.


Orange Maple Glazed Carrots

Scented with oranges and maple, these carrots are a delioghtful addition to any holiday menu. They also have the added advantage of being made in the microwave, keeping your stove and oven clear for other dishes. Don't be tempted to cheat on the ingredients by using commercial orange juice, maple flavored syrup, or ground nutmeg as the flavor is hundreds of times better with the fresh, genuine ingredients.

2/3 cup freshly squeezed orange juice
12 medium sized carrots, peeled, and matchsticked
Freshly grated zest of 1 orange
5 tablespoons real maple syrup
1 teaspoon freshly grated nutmeg
5 tablespoons butter
Salt
Freshly ground pepper

Heat the orange juice in a small casserole dish on high in the microwave for 90 seconds. Add the carrots and orange zest. Stir to coat the carrots and cover. Microwave on high for 7 minutes. Stir in the remaining ingredients and microwave uncovered for 2 minutes. Carrots should be crisp-tender. If they are not, microwave for an additional 2 minutes.

Makes 6 servings.

Total Time: 20 minutes
