Caramel Apple-Almond Crepes


A great dish for dessert or breakfast, these filled crepes are quick and easy to make, full of wonderful flavor, and make any occasion special.


Lemon, Pepper, Thyme, and Garlic Potatoes

Simple and flavorful, these potatoes are one of my favorite side dishes to serve at holiday dinners when we get tired of mashed potatoes. They are quick and easy to make, and go well with roast turkey, chicken, lamb, and all sorts of fish - especially fish cooked with lemon and garlic. If you do not have thyme oil, just use olive oil or your favorite cooking oil and add another tablespoon of thyme with the rest of the herbs.

6 large potatoes, peeled and thinly sliced
Salt
3 tablespoons thyme oil
6 tablespoons butter
Freshly grated zest of 1 lemon
Freshly squeezed juice of 1 lemon
Coarsely ground black pepper to taste
1 tablespoon fresh minced thyme
2 tablespoons chopped parsley
6 minced garlic cloves
5 shallots, minced

Parboil the potatoes in boiling water for 5 minutes. Remove, drain, and pat dry on towels. Lightly sprinkle with salt. Heat the thyme oil and 3 tablespoons of butter in a large heavy pan over medium heat. Add the potatoes to the pan and quickly brown the potatoes on both sides, one layer at a time. Place the browned potatoes on a warmed dish. Once all of the potatoes have been browned, mix together the remaining butter, lemon zest, lemon juice, coarse pepper, thyme, parsley, garlic, and shallots in a medium sized heavy pan. Heat over medium heat until the garlic and shallots become fragrant. Be careful not to brown the garlic. Drizzle the sauce over the potatoes or serve the sauce on the side.
