Caramel Apple-Almond Crepes


A great dish for dessert or breakfast, these filled crepes are quick and easy to make, full of wonderful flavor, and make any occasion special.


Hot Apple Eggnog

This warm eggnog has a wonderful, aromatic creamy apple flavor that makes a nice change from cold eggy eggnogs. This eggnog can also be chilled for up to 12 hours and served cold if desired. A pasteurized egg substitute can be used if desired, or you can test the eggnog mixture with a thermometer to make sure it reaches 160 degrees to make sure that any salmonella that might have been present in the eggs has been killed off.

2 eggs
3 cups half-and-half
2 cups milk
1/3 cup sugar
1 teaspoon ground cinnamon
Dash salt
3/4 cup applejack or apple brandy
Freshly grated nutmeg or additional cinnamon

Beat the eggs with the half-and-half and milk in a large saucepan. Add the sugar, cinnamon, and salt. Cook over medium heat for 10 minutes, or until the mixture is hot and thick, stirring constantly. Remove from the heat and add the apple brandy. Pour or ladle into mugs or cups and dust with nutmeg or cinnamon and serve warm.

Makes 12 servings.
