Picnic on a Pizza|
Recipe submitted by Pat Harmon as part of our Summer 2003 recipe contest.
"Here's a simple recipe using many already prepared ingredients to make a "picnic" anytime of the year, indoor or out. Any type of unbaked pizza shell can be used including packaged refrigerator dough."
1 12-inch unbaked prepared pizza crust (i.e.; from your grocery deli)
1 teaspoon olive oil
4 hot dogs
1 16-ounce can baked beans with bacon and brown sugar
1 pound purchased deli potato salad
3 teaspoons chopped scallions
2 teaspoons sweet relish
Yellow mustard in squeeze bottle
Preheat oven to 350 degrees F. Place pizza crust on a vented pizza pan or large baking sheet. Brush with olive oil. Bake for 8-10 minutes. Remove from oven to wire rack to cool slightly. Grill or broil hot dogs and slice in half, lengthwise. Keep warm. Meanwhile, drain excess liquid from baked beans and place in a microwave-safe bowl. Microwave on High for 4-5 minutes until heated through. Spoon baked beans around outer edge of pizza, in a 2-inch band next to crust. Spread potato salad over remainder of crust. Sprinkle paprika over top of potato salad followed by chopped scallions. Garnish with relish in center of pizza over top of potato salad. Place hot dog halves, cut sides down over top of potato salad in a spoke fashion. Squeeze mustard in a squiggle over top of each hot dog half. Slice pizza and serve.
