A great dish for dessert or breakfast, these filled crepes are quick and easy to make, full of wonderful flavor, and make any occasion special.

Smoky Barbecued Meat Loaf

Recipe submitted by Pat Harmon as part of our Summer 2003 recipe contest.

"Serve thick slices of Barbecued Meat Loaf on Kaiser rolls with Potatoes Au Gratin or Potato Salad and a Three-Bean Salad for an indoor picnic-like meal on a rainy holiday or anytime."

Editor's Note: We liked Pat's Smoky Barbecue Sauce so much we made it a stand alone recipe so those looking for barbecue sauces for other dishes could find it.

3/4 pound ground beef
3/4 pound ground pork
3/4 cup dry bread crumbs
1 teaspoon salt
1/8 teaspoon pepper
1/2 cup chopped onion
1/4 cup chopped green bell pepper
2 eggs
2 teaspoons ketchup
1 teaspoon dijon mustard
1/2 cup milk
2 teaspoons liquid smoke
Smoky Barbecue Sauce

Heat oven to 350 degrees F. For meat loaf, mix together all ingredients except liquid smoke. Form into a loaf and place into a shallow roasting pan. Brush meat loaf with liquid smoke. Bake at 350 degrees F. for 30 minutes. Pour prepared Smoky Barbecue Sauce over meat loaf and return to oven. Bake for additional 30-35 minutes, basting every 10 minutes. Remove from oven and let stand for 5-8 minutes. Cut into slices and serve with Smoky Barbecue Sauce.

Makes 6-8 servings.

Preparation Time: 20 minutes
Cooking Time: 30-35 minutes

Pat also adds "I am a retired office clerk who enjoys cooking and recipe contesting. I have participated in many cookoffs and recipe contests over the past 7-10 years. I also enjoy sewing and making crafts and traveling."
