Flourless Chocolate Cake with Whipped Cream and Raspberries


Diet, Schmiet. Some foods are worth breaking New Year's Resolutions - and this cake definitely fits the bill. Delicious, decadent, and drop-dead gorgeous, this cake is one of my favorite go-to recipes whenever I need the perfect finale for a celebratory meal.





Avocado and Fruit Salad with Papaya Seed Dressing

Recipe submitted by Sandra Gardner as part of our Summer 2003 recipe contest.

"A lovely, colorful and tasty salad. Guests will be surprised to learn that papaya seeds are not only edible, but are delicious in this dressing! Easy to make. Can be indiviually plated on leaf lettuce or layered in a large, clear glass bowl, with dressing served on the side."

6 large fresh oranges
6 large ripe avocados
2 medium or 1 large ripe papaya

Dressing Ingredients:

1 cup sugar
1 teaspoon salt
1 teaspoon dry mustard
1 cup tarragon vinegar
2 cups light salad oil
1 small onion chopped
3 tablespoons fresh papaya seeds

Place sugar, salt, mustard and vinegar in blender or food processor. Turn on and gradually add oil and onion. When thoroughly blended, add papaya seeds. Blend only until seeds are the size of coarse black pepper. Peel and slice oranges, avocados and papayas. Hint: peel the oranges over a bowl, then use a little of the juice to pour over the sliced avacados to keep them fresh and colorful during preparation time. Arrange avocado and fruit slices pinwheel style on individual plates lined with leaf lettuce or alternate layers in a large clear glass bowl, and serve dressing on side.

Makes 10-12 servings.
