Angel Hair Nests with Olive Eggs

Angel Hair Nests with Olive "Eggs"

Perfect for spring, this easy and delicious recipe makes a great appetizer, side dish, or entree and will add a bit of whimsy to your spring table. And all in just about 15 minutes total time!





Coffee Can Cookery

Thanks to Angela Gillaspie, webmistress of the Southern Angel Website, for sharing this fun and easy tailgate or camping recipe.

2 strips bacon
1 medium potato, sliced
1 medium onion, sliced
1 medium tomato, sliced
2 stalks celery
1/3 pound ground beef
1 carrot
Salt and pepper to taste
Coffee can and lid (preferably rinsed out and not rusty [wink])

Cut carrot in half lengthwise. Cut celery and carrot into 2 inch lengths. Cut bacon in half. Mold 2 meat patties. Place 2 pieces of bacon on bottom of can. Place layers of all ingredients. Repeat. Place closed coffee can on top of glowing coals for 25 minutes. Open lid and check after 10 minutes, if browning too rapidly, pour 2 tablespoons of water in can.
