Recipe of the Week

Angel Hair Nests with Olive Eggs

Angel Hair Nests with Olive "Eggs"

Perfect for spring, this easy and delicious recipe makes a great appetizer, side dish, or entree and will add a bit of whimsy to your spring table. And all in just about 15 minutes total time!

Savory Ham Triangles

Based on a popular recipe for a crab appetizer, these savory bites were developed for my seafood hating husband. While I still admit to preferring the crab version, this ham version is also excellent and very easy to make. Not only are they extraordinarily good, they are insanely easy to make, freeze like a dream, and are a great appetizer to always have on hand. I like to wrap each muffin individually in foil and take out just as many as I need when I need them. They even make really good breakfast or brunh food as well! You do not have to freeze them or make them in advance - you can just mix the filling, spread it, and bake them and have a hot appetizer in less than ten minutes.

6 ounces finely diced cooked ham
5 ounces Old English cheese spread
1/4 cup butter
2 tablespoons mayonnaise
1 teaspoon garlic powder
1 teaspoon onion powder
Freshly ground black pepper
6 split English muffins

In a medium bowl mix together everything except for the English muffins until smooth. Spread the mixture on each English muffin half evenly. Place on a baking sheet and broil 4-5 inches from the heat for 2-3 minutes, or until bubbly hot and lightly browned. Remove from the oven and cut each muffing into 4-6 wedges and serve hot.

Makes 8 servings.

Preparation Time: 5 minutes
Cooking Time: 5 minutes
Total Time: 10 minutes
