Blue Cheese and Walnut Spirals
These quick and easy appetizers are always a favorite on my party trays. I make them a day in advance and they always come out perfectly, making them great when you have little preparation time right before a party. The filling is also really good on pita bread or flour tortillas, or just served at room temperature with crackers.
8 ounces blue cheese
1/4 cup minced fresh parsley
1 tablespoon mayonnaise
1 tablespoon lemon juice
Freshly ground black pepper
1/2 cup finely chopped toasted walnuts
8 6-inch corn tortillas
Mash the blue cheese in a small bowl until smooth. Mix in the rest of the ingredients except for the tortillas to form a chunky paste. Spread the mixture evenly on one side of each tortilla. Roll up tightly, wrap well, and refrigerate until ready to serve. Slice thinly and place on a serving dish.
Makes 6 servings.
