Flourless Chocolate Cake with Whipped Cream and Raspberries


Diet, Schmiet. Some foods are worth breaking New Year's Resolutions - and this cake definitely fits the bill. Delicious, decadent, and drop-dead gorgeous, this cake is one of my favorite go-to recipes whenever I need the perfect finale for a celebratory meal.





Brandy Spiced Nuts

Modified from a traditional Victorian recipe, these nuts are surprisingly tasty and easy to make. They make great snacks or nibblers, especially with cocktails, and are also wonderful gifts. They also make nice garnishes for pies and other dishes.

2 egg whites
1/4 cup brandy
2 teaspoons salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground allspice
1 teaspoon ground ginger
1/2 teaspoon ground cardamom
4 cups unsalted whole nuts
1 1/2 cups powdered sugar

Preheat the oven to 275 degrees and lightly grease two large baking sheets. Beat the egg whites in a large bowl until frothy. Add the brandy, salt, and spices and mix well. Add the nuts and toss until well coated. Spread the nuts on the prepared sheet and sift about half of the powdered sugar over the nuts. Flip, and sift the remaining sugar over them. Bake for for 1 hour, stirring twice. Serve hot, or cool and store in an airtight container.

Makes 4 cups spiced nuts.

Cooking Time: 1 hour
Total Time: 1 hour, 5 minutes
