Flourless Chocolate Cake with Whipped Cream and Raspberries


Diet, Schmiet. Some foods are worth breaking New Year's Resolutions - and this cake definitely fits the bill. Delicious, decadent, and drop-dead gorgeous, this cake is one of my favorite go-to recipes whenever I need the perfect finale for a celebratory meal.





Mexican Cheese Bites

These little bites are spicy and flavorful and are always snatched up in seconds as soon as they are cut. I usually make a mild batch and a hot batch with extra peppers and a lot of hot sauce - but both versions are excellent.

8 eggs
1/2 cup flour
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon black pepper
3 cups shredded Monterey Jack cheese
12 ounces large curd cottage cheese
8 ounces drained chopped jalapeno peppers
Dash hot sauce (or to taste)

Preheat the oven to 350 degrees and grease a nine inch square pan. Beat the eggs until thick and lemon colored, about five minutes. Sift in the flour, salt, baking powder, and pepper. Mix well, then add the cheeses, peppers, and hot sauce to taste. Pour into the prepared pan and bake for 40 minutes. Let stand for 10 minutes, then cut into squares and serve hot.
