Angel Hair Nests with Olive "Eggs"

Perfect for spring, this easy and delicious recipe makes a great appetizer, side dish, or entree and will add a bit of whimsy to your spring table. And all in just about 15 minutes total time!





Parmesan Chicken Wings

These wings, with their garlic and herb infused sauce and a healthy dose of flavorful Parmesan cheese are a favorite of my family. They can be made up to two days in advance and can be reheated in a warm oven or microwave, or served cold or at room temperature. They also freeze really well.

1 1/2 cups freshly grated Parmesan cheese
2 tablespoons minced fresh flat leaf Italian parsley
2 teaspoons crumbled dried Italian herbs
Freshly ground black pepper to taste
2 pounds chicken wings
1/3 cup melted butter

Preheat the oven to 375 degrees and lightly grease a baking sheet and set aside. In a large shallow bowl mix together the cheese, herbs, and pepper. Dip each chicken wing into the butter and then dip into the cheese mixture and roll to coat. Place on the prepared baking sheet. Bake for 25 minutes, then flip over. Bake for an additional 10-15 minutes, or until golden brown.

Makes 6 servings.

Cooking Time: 45 minutes
Total Time: 55 minutes
