Flourless Chocolate Cake with Whipped Cream and Raspberries

Flourless Chocolate Cake with Whipped Cream and Raspberries

Diet, Schmiet. Some foods are worth breaking New Year's Resolutions - and this cake definitely fits the bill. Delicious, decadent, and drop-dead gorgeous, this cake is one of my favorite go-to recipes whenever I need the perfect finale for a celebratory meal.

Candied Sweet Potatoes

For those purists who demanded a plain candied sweet potato recipe year after year, here it is! Simple and easy, this traditional recipe for candied sweet potatoes can be made with fresh sweet potatoes as described below, or cooked canned yams or sweet potatoes can be used instead for an even faster dish. This version can easily be made ahead and then reheated at 350 degrees for 20 minutes before serving.

6 medium sweet potatoes
Salt and pepper 6 tablespoons butter
1/2 cup brown sugar

Cook the sweet potatoes in boiling salted water for 20 minutes, or until barely tender. Preheat the oven to 375 degrees. Drain the potatoes, peel, and halve lengthwise. Butter a casserole dish and arrange the potatoes in the dish. Salt and pepper the potatoes to taste. Sprinkle the potatoes with the brown sugar and dot with the butter. Bake for 30 minutes, turning the potatoes over as they bake a few times. The potatoes will glaze as they bake.

Makes 8 servings.

Preparation Time: 10 minutes
Cooking Time: 50 minutes
Total Time: 1 hour
