Angel Hair Nests with Olive "Eggs"

Perfect for spring, this easy and delicious recipe makes a great appetizer, side dish, or entree and will add a bit of whimsy to your spring table. And all in just about 15 minutes total time!





Basic Sweet Potato Pie

This is my recipe for a bare bones, no frills, sweet potato pie. It is easy to make, hard to mess up, and can be made a day in advance, making it a great addition to any holiday menu.

1 1/2 cups cooked and mashed sweet potatoes
2 1/2 tablespoons softened butter
1 1/2 cups sugar
3 eggs, separated and at room temperature
2/3 cup evaporated milk
2 teaspoons vanilla extract
1 1/2 teaspoons freshly grated nutmeg
Pastry for a 9 inch deep dish crust

Mix the cooled sweet potatoes, butter, and sugar together. Beat the egg yolks in a small bowl and add to the sweet potato mixture. Add the evaporated milk, vanilla, and nutmeg to the mixture and let sit for 15 minutes. Preheat oven to 375 degrees. Beat the egg whites in a non-reactive bowl until stiff peaks form. Gently fold the egg whites into the sweet potato mixture. Pour into the pie pastry and bake for 10 minutes. Then turn the oven down to 350 degrees and bake for 35-40 minutes or until set in the center.

Makes 8 servings.
