Dried Fruit and Apple Bake|
This delicious fruit based dessert topped with a golden brown topping makes an excellent finale for Thanksgiving dinner topped with vanilla ice cream or whipped cream. For pickier children (or adults) all raisins, cherries, or cranberries can be used in this recipe, just use 1 1/2 cups dried fruit in total.
1 cup apple juice or cider
1/2 cup dried cranberries
1/2 cup dried golden raisins
1/2 cup dried diced tart cherries
2 teaspoons ground cinnamon, divided
2/3 cup flour
2/3 cup packed brown sugar
1/4 teaspoon salt
6 tablespoons butter, chilled and cut into small pieces
3 pounds tart cooking apples, peeled, cored, and thinly sliced
Preheat the oven to 400 degrees and heavily butter a 9X13 inch baking pan. Place the juice or cider, cranberries, raisins, cherries, and 1 teaspoon of cinnamon in a small saucepan and simmer over medium-low heat for ten minutes. Let the fruit cool to room temperature and then drain and set aside. In a small bowl whisk together the flour, brown sugar, the remaining tablespoon of cinnamon, and salt. Cut in the butter with a pastry blender or two knives until the mixture resembles a coarse meal. Toss the apples and dried fruit together in a large bowl. Spread the fruit mixture over the bottom of the pan. Sprinkle the flour mixture evenly over the fruit. Bake for 25 minutes, or until the topping is golden and the apples are very tender.
