Caramel Apple-Almond Crepes

A great dish for dessert or breakfast, these filled crepes are quick and easy to make, full of wonderful flavor, and make any occasion special.

Fall Fruit Parfaits

These wonderful low fat parfaits are full of great fall fruit flavor, yet are still creamy and rich enough to appeal to children. Just don't let them know it is healthy for them! For a quicker assembly that can be made farther in advance, prepare the fruit mixture and pudding up to 48 hours in advance. Simply layer before serving.

2 tablespoons margarine
2 ripe pears, peeled, cored, and chopped
2 ripe peaches, peeled, cored, and chopped
2 apples, peeled, cored, and chopped
1 tablespoon brown sugar
1/2 teaspoon ground cinnamon
dash fresh nutmeg
1 package fat free butterscotch pudding
1 1/2 cups very cold skim milk
2 cups low fat vanilla yogurt
2 cups cinnamon-raisin granola

In a medium skillet, melt the margarine over medium heat. Add the chopped fruit, brown sugar, cinnamon, and nutmeg. Toss to coat evenly, and sauté for 3-4 minutes until the fruit starts to soften slightly. Remove from the heat and set aside to cool. In a medium bowl, mix together the butterscotch pudding and skim milk. Set out 8 parfait glasses or dessert dishes. Start layering the parfaits...starting with a little bit of butterscotch pudding. Top with a few tablespoons of the fruit mixture, then a few tablespoons yogurt, and then sprinkle with a about an inch of granola. Repeat the layers, ending with yogurt and a garnish of granola. Serve immediately, or chill for up to 4 hours before serving.
