Cranberry Orange Relish
Crisp, flavorful, and extremely easy to make, this relish is a favorite in our household, except we like our cranberries really tart and usually put half - or even less - of the sugar called for into the relish. However, the resulting relish is really tart and most people do not like it that way, which is why I include a full 2 cups of sugar in the recipe - which you can feel free to adjust to you and your family's taste.
4 cups fresh or frozen cranberries
2 seedless oranges
2 cups sugar
Place the cranberries in the food processor and chop. Slice the oranges into chunks, but leave the peel on. Add to the processor and chop until fine. Mix the sugar into the mixture and chill for at least 24 hours.
Makes 10 servings.
