Raspberry Cranberry Relish|
Here is a relish lower in sugar than most, but with a sweeter flavor that is definitely more kid friendly. You can place whole cranberries and sliced apples in a food processor to chop, but make sure to mix in the raspberries by hand. Serve this relish as you would traditional relish, or even over sliced pound cake or vanilla ice cream for an easy dessert. This relish stores very well and can be made up to 3 days in advance.
2 cups cranberries, chopped
2 sweet apples, peeled, cored, and diced
10 ounces thawed frozen raspberries with their juices
1 cup sugar
Mix all of the ingredients together in a small bowl to combine. Tightly seal and refrigerate overnight before serving for the best flavor.
