Caramel Apple-Almond Crepes

A great dish for dessert or breakfast, these filled crepes are quick and easy to make, full of wonderful flavor, and make any occasion special.

Spaghetti and Turkey Pie

A variation on a favorite recipe of my husband's family, this simple dish will become a super easy to make favorite in your household too. Any cooked meat (or combination) can be used in this recipe, and it can be served with or without your favorite spaghetti sauce. You can also experiment with adding cooked vegetables and other cheeses as the recipe is very forgiving.
1/2 pound spaghetti, cooked al dente
1 tablespoon olive oil
1/2 cup minced yellow onion
2 minced garlic cloves
4 eggs
4 ounces freshly grated Parmesan cheese
1 1/2 cups cubed cooked turkey

Heat the oil in a medium sized heavy skillet over medium high heat. Add the onion and sauté for 5-7 minutes, or until soft and translucent. Add the garlic and sauté for a minute or two more. In a large bowl beat the eggs until thick and lemon colored. Mix in the cheese until smooth. Toss in the cooked onion mixture and turkey. Add the spaghetti and toss to coat evenly with the egg mixture. Scrape the mixture into a large heavy ovenproof skillet and place over medium low heat. Cook for about ten minutes, or until set in the center. Preheat the broiler. Broil the pie until it is lightly browned. Cut into small wedges and serve hot or at room temperature.
