Caramel Apple-Almond Crepes


A great dish for dessert or breakfast, these filled crepes are quick and easy to make, full of wonderful flavor, and make any occasion special.


Thanksgiving Cabbage Salad

This tart and tangy salad is as quick and easy to prepare as traditional Cole slaw, but it has a wonderful cumin scented flavor and utilizes favorite fall ingredients. While many people do not think of cabbage salad and Thanksgiving together, it makes a surprisingly nice addition to most menus, can be made in advance, stores better than other vegetable salads, and is great with leftover turkey.

2 sweet eating apples, cored and chopped
1 tablespoon lemon juice
1 cup heavy cream
1 tablespoon red wine vinegar
2 tablespoons sugar
2 tablespoons cumin seeds
Salt
Freshly ground black pepper
1/3 cup dried cranberries or raisins
1 head green cabbage, shredded
1 head red cabbage, shredded


In a small bowl toss the apples and lemon juice together to prevent browning. Mix the heavy cream, vinegar, sugar, cumin seeds, salt, and pepper in a large bowl. Add the apples and dried cranberries. Toss to combine well. Add the cabbage and gently mix to coat the cabbage with the dressing. Let chill for at least an hour, and up to four hours before serving.

Makes 8 servings.

Preparation Time: 10 minutes
Chilling Time: 1 hour
Total Time: 1 hour, 10 minutes
