Mom's Apple Slices
Recipe reprinted with permission from Becky's Cookbook.
"This is another of my "special recipes". I have the most wonderful memories of when my Mother-In-Law and Father-In-Law were well enough to make all kinds of wonderful things and freeze and can. They made several batches of these when they did applesauce and they'd freeze them in single serving size. We'd have them all during the winter. It's one of those recipes that evokes memories of Nana and Pop-pops house, little kids, and busy wonderful family times. Now "I" make them when "I" do applesauce, and make sure Nana has a bunch in her freezer for the winter. Of course I don't make them as good as SHE did, but isn't that the way it always is???"
1 cup butter or margarine
2 1/2 cups flour
1 tablespoon sugar
1/2 teaspoon salt
1/2 package yeast (1 teaspoon)
2 egg yolks, beaten
1/2 cup milk
8 to 10 apples, peeled and sliced
1 cup sugar
6 tablespoons flour
1 teaspoon vanilla
1/4 cup butter or margarine
Thin powdered sugar frosting
Preheat oven to 350 degrees. Mix 1 cup butter or margarine, flour, sugar and salt as you would a pie crust. Add milk and egg yolks. Roll 2/3 of dough to fit a 9x13 inch pan, bottom and up sides a little. Put apples over top of crust. Mix sugar, flour, and vanilla. Sprinkle over apples and dot with 1/4 cup butter. Roll out rest of dough and overlap. Bake for 1 hour. As soon as it is removed from the oven, frost with a thin powdered sugar icing. Let set. Can be frozen in meal sized portions and warmed.
