Caramel Apple-Almond Crepes


A great dish for dessert or breakfast, these filled crepes are quick and easy to make, full of wonderful flavor, and make any occasion special.


Harvest Rice

Recipe Submitted by Honeybunch.

"We eat this rice dish all fall long with roast chicken, turkey, pork loin, pork chops, and everything else!"

1 1/2 cups chicken broth
1 cup white wine
1/2 cup wild rice
1/2 cup brown rice
3 tablespoons butter
2 diced onions
1 tablespoon brown sugar
1 cup dried cranberries
1 cup diced apples
2/3 cup fresh sliced mushrooms
1/2 cup toasted sliced almonds
1/2 teaspoon orange zest
Salt and pepper

Mix the broth, wine, and wild rice in a saucepan and boil for 20 minutes. Add the brown rice and cook for another 20-30 minutes or until cooked and the broth and wine are absorbed. While the rice is cooking, melt the butter in a skillet. Add onions and brown sugar and cook until caramelized. Add the cranberries, apples, and mushrooms and cook for 15 minutes. Add the almonds, orange zest, and salt and pepper. Mix with the rice. Heat through and serve hot.

Makes 6 servings.
