Angel Hair Nests with Olive "Eggs"

Perfect for spring, this easy and delicious recipe makes a great appetizer, side dish, or entree and will add a bit of whimsy to your spring table. And all in just about 15 minutes total time!





Apple Pecan Cheesecake

"My family cannot get enough of this cheesecake and they ask for it all year long. You can make it a few days in advance and it only gets better!"




Crust:
1 cup graham cracker crumbs
1/2 cup finely chopped pecans
3 tablespoons brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
3 tablespoons melted butter or margarine
Cheesecake:
16 ounces softened cream cheese
1/2 cup sugar
2 eggs
1 teaspoon vanilla extract
Topping:
4 cups peeled and sliced tart apples
1/3 cup brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/3 cup chopped toasted pecans

Preheat oven to 350 degrees. Mix together the crust ingredients in a small bowl. Press into the bottom and sides of a greased 9 inch springform pan. Bake for 10 minutes. While baking the crust, whip together the cheesecake ingredients until light and fluffy. Pour the filling into the hot crust. Bake for 10 minutes. While the cheesecake is baking, toss together the topping ingredients. Place on top of the cheesecake and bake for 50-60 minutes. Cool in the pan on a wire rack. Refrigerate overnight before serving.

Makes 12 servings.
