Lime and Basil Sorbet

Makes 6 - 8 servings
1/2 cup sugar
1/2 cup water
1/2 cup fresh lime juice
10 - 15 fresh basil leaves, chopped coarsely
Sprig of fresh basil for each serving as a garnish
SIMPLE SYRUP:
Dissolve sugar in water, bring to a boil, lower heat, simmer for 5 minutes; remove from heat, cool.
Pour lime juice and simple syrup into a blender or food processor. Add chopped basil leaves and blend well. Transfer blended mixture to a shallow pan, cover and freeze until firm.
Transfer frozen mixture to a blender or food processor again and blend well. Freeze again in the shallow pan. When ready to serve, use a melon baller and place 3 scoops in a stemmed glass, garnish with a sprig of fresh basil and serve.
