Lemon-Almond Sugar Snap Peas|
These piquant crunchy peas are easy, elegant, and super fast - which makes it tops in our book! We love these peas with any lemony main dish, especially seafood or fish. The peas can be steamed or boiled in advance and tossed with the buttery lemon sauce at the last minute if desired.
1 pound trimmed sugar snap peas
2 tablespoons butter
Zest and juice of 1 small lemon
1/4 cup toasted sliced almonds
Freshly ground black pepper
Boil or steam the peas until just crisp tender - about a minute or two and drain well. Melt the butter in a medium heavy saucepan. Add the lemon zest and juice along with the peas and cook for a minute. Add the almonds and season to taste. Serve immediately.
