Tequila-Orange Salmon |
Bright and sunny flavored, these salmon fillets have tons of zing! Terrific with any Mexican or Southwestern inspired menu, these fillets are especially good served with ice cold margaritas or citrus spiked cerveza and a simple tossed salad.
1/3 cup freshly squeezed orange juice
1/4 cup tequila
3 tablespoons olive oil
2 tablespoons chopped fresh cilantro
2 small minced jalapeno peppers
2 minced garlic cloves
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 teaspoon ground cumin
4 1 inch thick salmon fillets
In a medium bowl or plastic bag mix together all of the ingredients with the exception of the salmon. Add the salmon and marinate in the refrigerator for 30-60 minutes, turning occasionally. Grill the salmon over medium heat for 7 minutes, flip and cook for another 2-3 minutes, or until the fillets are cooked through. Serve hot.
