Grilled Potatoes Anna
Potatoes Anna is one of my absolute favorite side dishes - and this grilled version ranks right up there with it! The crispy layers of potatoes are easy to make and very delicious - not to mention terribly addictive. These potatoes are superb served with any grilled entree, and it is easy to add a bit of herb or spice from your main dish to meld the flavors better. Any fresh or dried herbs or spices can be added to the olive oil before grilling with excellent results. We especially like rosemary with them. For the thinnest potato slices, use a mandoline or food processor to get wafer thin potato slices.
4 russet potatoes
2 tablespoons olive oil
Dash lemon juice
Salt
Freshly ground black pepper
Peel and thinly slice the potatoes. Toss with the olive oil, lemon juice, and liberal amounts of salt and pepper. Layer the potato slices on a well-oiled grill and cook over medium heat for 3-4 minutes on each side, flipping over very carefully, or until browned and cooked through.
Makes 4 servings.
