Tomato and Onion Salad
Not only in villages but in cities, I think, the following salad is the number one, popular salad of the Croatian coastal area. A simple salad made from vine-ripened, sweet tomatoes and fresh onions goes well with a slice of fresh homemade bread.
5 tomatoes, halved then quartered
1 medium onion, sliced thinly
1 tablespoon white vinegar
2 tablespoons oil
Salt to taste
1. In a large bowl, place tomatoes and onions. Toss lightly.
2. Sprinkle vinegar and drizzle oil on top. Add salt. Serve chilled on individual plates.
Makes 4 servings.
