Croatian Roasted Potatoes and Vegetables|
A brick oven was used for baking in the old days but now in the village they cook over an open fire or a wood stove. A fast and easy recipe to prepare, itís also considered the favorite way to serve it.
4 potatoes, quartered
2 carrots, quartered
1 rib celery, quartered
1 yam, quartered
1 onion, quartered
1/4 cup olive or canola oil
Salt to taste
1. In a large bowl, place potatoes, carrots, celery, yam and onion pieces.
2. Sprinkle oil over vegetables. Make certain every piece is covered with oil. Add salt.
3. In a medium Dutch oven, place vegetables, spread evenly. Bake at 375 oven for 45 minutes. Check for doneness by piercing a fork in a potato.
