Saft
Cornmeal or ‘Pule’ is often served with the ‘Saft’. The villagers enjoy dipping bread into it as well. This simple recipe looks like a tomato sauce but it is eaten as a side dish or main meal.
1 tablespoon oil
1 onion, chopped
1 rib celery, chopped
1 red pepper, julienne
4 ripe tomatoes, sliced
1 vegetable bouillon cube
Salt to taste
1. In a medium pot, over medium heat, warm oil and add the onion. Cook until clear and soft for 2-3 minutes.
2. Add celery and red pepper and stir for another 2-3 minutes.
3. On a lower heat, add the tomatoes, simmer for 20 minutes. Tomatoes will become soft. Add vegetable bouillon and salt.
Makes 4 servings.

Cooking time: 26 minutes
Cooling time: 5 minutes
Total time: 41 minutes
