Flourless Chocolate Cake with Whipped Cream and Raspberries


Diet, Schmiet. Some foods are worth breaking New Year's Resolutions - and this cake definitely fits the bill. Delicious, decadent, and drop-dead gorgeous, this cake is one of my favorite go-to recipes whenever I need the perfect finale for a celebratory meal.





Peachy Keen Punch

I am a huge peach fanatic and this time of the year when they are fresh and cheap and juicy I go a bit nuts. This is one of my favorite ways to enjoy peaches that is simple, refreshing and a real crowd pleaser. We always have peaches in the freezer, but you can slice fresh peaches and freeze them for a few hours, or puchase frozen peaches at your grocery store.

6 cups frozen peach slices
2 liters chilled lemon lime soda
2 cups diced fresh (or thawed frozen) peaches
1 quart peach ice cream, cubed or scooped into balls

Place half of the frozen peaches in a blender and puree until smooth. Place in a large punch bowl. Repeat with the rest of the peaches. Whisk together the peach slush and soda. Add the diced peaches and the ice cream and serve immediately.

Makes 8 servings.
