"I am a single mother of an active 10 Year old and 5 year old twins. As I work full time I dont have alot of time to cook, but want my kids to have good food when they are home. I like recipes that are easy, good, and freeze well. The kids really enjoy my recipes, and am glad they all come willingly to the dinner table!
Enjoy this lasagne that freezes well and can be easily prepared. It tastes great being reheated in either the oven or the microwave, so its a great take to work item. I use 5x7 foil pans as we have smaller and very meaty and cheesy appetites, but you can use any size you wish.
This recipe is very simply despite its complicated look and is well worth the small effort! I try to always have it on hand in the freezer. It is simple to make in smaller portions, and when popped out of the foil pans and cut, micowaves into a great dinner for the family or emergency guests!"
1 1lb package wide lasagne noodles, cooked til tender
1 1/2 lb ground beef, browned
1 small onion, diced
1 16oz Pkg Riccotta cheese
2 medium eggs
1/4 cup grated parmesian cheese
2 jars spaghetti sauce
1 sm can tomato paste
1 lb grated mozarella cheese
1 lb grated monterey Jack cheese
4 Tbsp Parsley
salt and pepper to taste
Optional: 1 small can mushroom pieces
Secret Ingrediant: 1 cup bacon bits, preferably fresh
Add spaghetti sauce, tomato paste, parsley and onion to the browned ground beef. cook over medium heat approx 10 minutes. (This can be done while noodles are cooking). Mushrooms and bacon may be added at this time also. Combine eggs, parmesian, ricotta cheese, and salt and pepper in a small bowl. set aside. Place 1 layer of noodles in the bottom of the pans. layer on top of this approximately 1 1/2 cups of meat mixture, followed by 3 tablespoons of ricoota mixture, follwed by approximately 1/2 cup grated cheese. Repeat above layering. End with 1 layer noodles and top with grated cheeses. Bake at 350 degrees for 15-20 minutes or freeze covered containers. Serve with Hot Garlic Bread.
