Angel Hair Nests with Olive "Eggs"

Perfect for spring, this easy and delicious recipe makes a great appetizer, side dish, or entree and will add a bit of whimsy to your spring table. And all in just about 15 minutes total time!





Herb and Garlic Spiced Oysters on the Half Shell

Oysters have long been associated with romantic occasions, and many restaurants include them on the menu during this romantic time of the year. We start off our Valentine's Menu with oysters served with a fat free herb and garlic dressing rather than a traditional artery clogging oyster dish like Oysters Rockefeller.

1/4 cup tarragon or apple cider vinegar
1 minced shallot
1 minced garlic clove
1 teaspoon crumbled dried Herbes de Provence
Salt
Coarsely ground black pepper
1 tablespoon minced fresh parsley
8 fresh oysters, on the half shell

In a small bowl mix together the vinegar, shallot, garlic, Herbes de Provence, salt, and pepper. Cover tightly and refrigerate for at least 4 hours, and up to 3 days. Add the parsley to the vinegar mixture and mix well before serving. Serve the oysters with the vinegar sauce.
