Caramel Apple-Almond Crepes


A great dish for dessert or breakfast, these filled crepes are quick and easy to make, full of wonderful flavor, and make any occasion special.


Caramel Apple Cheesecake Pie

A mixture of three favorite desserts, caramel apples, cheesecake, and apple pie, this dessert will delight even the most picky of eaters. The recipe may seem complicated, but it really is not too hard. It is most definitely worth the extra time and effort to make. The pie can be made up to 24 hours in advance.

2 tablespoons butter
1 cup brown sugar, divided
4 large tart apples, peeled, cored, and sliced
16 ounces caramel ice cream sauce, divided
8 ounces softened cream cheese
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
2 teaspoons pure vanilla extract
1 egg
9 inch graham cracker crust

Preheat the oven to 375 degrees. Melt the butter in a large heavy skillet over medium heat. Add half of the brown sugar (1/2 cup) and cook, stirring constantly until the brown sugar melts. Add the apples and cook for 10-12 minutes, stirring constantly, until the apples are tender, but not mushy. Set the apples aside. In a medium bowl beat the cream cheese and remaining 1/2 cup brown sugar until light and fluffy. Add the cinnamon, nutmeg, vanilla, and egg and beat until very smooth. Carefully fold 3/4 cup of the caramel sauce into the cream cheese mixture. Do not overmix, some marbling is perfectly normal. Mix another 1/2 cup of sauce with the apples, making sure to coat them evenly. Spoon the apples into the pie crust. Top with the cream cheese mixture. Bake for 35-40 minutes, or until the pie is golden brown and set in the center. Cool at room temperature and refrigerate for at least 4 hours. Serve the pie with the leftover caramel sauce.
