Simple Olive-Dijon Salad
When dealing with a menu or dinner with a wide variety of flavors, colors, and textures, sometimes a simple salad makes a great break from all the activity. This simple salad has lots of flavor, but is really quick to prepare and adds a nice quiet note to your Chanukkah dinner. The lettuce mixture can be made up to 6 hours in advance, and the dressing can be made up to 48 hours in advance.
5 cups washed and torn Bibb lettuce
3 cups washed and torn spinach leaves
1 large thinly sliced red onion
1 1/2 cups halved black olives
1/3 cup red wine vinegar
1 tablespoon Dijon mustard
1 crushed garlic clove
Salt
Freshly ground black pepper
1 cup olive oil
In a large bowl, toss the lettuce, spinach, onion, and olives well to combine. Refrigerate until ready to serve. In a small bowl whisk together the vinegar, Dijon mustard, garlic, and salt and pepper to taste. Slowly whisk in the olive oil to form a thick dressing. Refrigerate until ready to serve, and then toss with the lettuce mixture right before serving, making sure to shake well first.
Makes 8 servings.
