Flourless Chocolate Cake with Whipped Cream and Raspberries


Diet, Schmiet. Some foods are worth breaking New Year's Resolutions - and this cake definitely fits the bill. Delicious, decadent, and drop-dead gorgeous, this cake is one of my favorite go-to recipes whenever I need the perfect finale for a celebratory meal.





Prosciutto Rolls

If only prosciutto wasn't a tad bit on the expensive side...we would eat it every day. Most likely we would not appreciate it as much as we do now. This appetizer is very simple and savory. You can substitute ham for the prosciutto if you cannot find it or if it is beyond your budget. Apples can be used in place of the pears if desired.

2 ounces cream cheese
2 ounces stilton cheese
Freshly ground black pepper
12 very thin slices prosciutto
1 pear, cut into 12 slices
Lemon juice

Mix together the cream cheese and stilton until well blended. Add pepper to taste. Spread the cheese mixture on each of the prosciutto slices. Brush the pear slices with lemon juice and place one slice on each slice of prosciutto. Roll up the prosciutto lengthwise. Wrap in plastic wrap and chill until ready to serve.

Makes 6 servings.
