Detail of Caramel Apple-Almond Crepes

Caramel Apple-Almond Crepes

A great dish for dessert or breakfast, these filled crepes are quick and easy to make, full of wonderful flavor, and make any occasion special.

Mushrooms Stuffed with Pecans and Cream

This is a very decadent and different recipe. The pecan stuffing makes for a rich and creamy stuffing with a marvelous nutty flavor and great crunch. Even non-mushroom lovers have been known to rhapsodize over this recipe.

30 medium mushrooms
1 cup finely chopped pecans
1/4 cup chopped fresh parsley
1/4 cup unsalted butter
2 cloves garlic, finely chopped
1/2 teaspoon salt
1/2 teaspoon dried thyme
1/2 teaspoon white pepper
1/4 cup heavy cream

Remove the stems from the mushrooms and finely chop. Place the mushroom caps in a baking dish, hollow side up. Measure 1 cup of the mushroom stems and use the rest in another dish. Place the 1 cup of stems, pecans, and parsley in a bowl. Stir in the butter, garlic, salt, thyme, and pepper. Place the mixture into the mushroom caps. Drizzle cream over each mushroom cap. Bake at 350 degrees for 20 minutes, or until brown. Serve hot.

Makes 8 servings.
